Jamaican Jerk Ribs - Fusion Recipe

A Jamaican Jerk Sauce Recipe by Chef David Tsang

                                                                                   

                                               Ingredients:

Jamaican Jer Rib

2-1/2 C.

Jamaican Jerk Sauce (Starport 125)

4-5 lbs.

Pork ribs (about 12 ribs)

3/4 C.

Water

 

Jamaican Jerk sauce marinated rib

Instructions:

1. Mix Jamaican Jerk sauce and water and pour over ribs, rubbing evenly on both sides of the slab.
2. Place the ribs and marinade with meaty side down on a large sheet of foil, wrap securely and place in a foil lined pan.

    Or place ribs and marinade directly in pan and cover pan tightly with foil.
3. Let marinate 30 minutes or more.
4. Preheat oven to 300F and roast ribs for 3-1/2 hours, turning once.
5. Prior to serving, brush on more Jamaican Jerk sauce and grill to caramelize sauce, or place under broiler to brown.
6. Serve with roasted sweet potatoes and tropical coleslaw.
