and Sour Chicken or Pork Recipe by Chef David Tsang
Asian recipe,
Sweet and Sour sauce chicken or pork, grilled pineapple and
red
bell peppers

1 C. |
Hawaiian Sweet and Sour Sauce (Starport 215)
|

oz. |
Chicken breast, breast
boneless, skinless, sliced 1.5"x1"x1/2" |
|
3/4 C. |
Crispy Seasoning Batter (Starport 354)
|
|
8 oz. |
Pineapple, fresh, cut to wedges then grilled and cut to 1" chunks
|
|
1 med.
|
Red bell pepper, 1" square |
|

Instructions:
-
Char
pineapple wedges on grill or in broiler about 45 seconds and cut to 1”
chunks.
-
Coat
chicken evenly with Crispy Seasoning Batter and set aside.

Just
before frying, roll chicken in Crispy Seasoning Batter again to pick
up more batter.

Deep fry
battered chicken @ 350 F. 2-3 minutes and remove. This step can be done
earlier in the day and refrigerated until ready for use.

For second frying: when oil temperature returns to 350 F, refry chicken 2-3 minutes until golden and done.

Remove
chicken and drain off excess oil.

Oil
blanch bell peppers in 350F oil 10 seconds and remove.

Heat a
wok or pan on medium high heat; add in Hawaiian Sweet & Sour Sauce,
bring to a boil.

Add in
grilled pineapple, oil blanched red bell pepper and fried chicken chunks,
toss with sauce quickly remove and serve immediately.

Garnish
with green onions or cilantro sprig.
