Chinese Restaurant Stir-fry Secret - Asian Food Concept
Meat Marinade & Velvetization Secret: First, marinate meat with Starport Marinade Seasoning 356, to tenderize and retain the moisture, then oil-blanch the meat sealing all the surfaces and keeping the moisture in. The meat is now "velvetized". When ready to use, these pre-cooked velvetized meats may be stir-fried and re-cooked in seconds.
To MARINATE 10 lbs sliced or diced chicken: Use 0.5 lb. (1 C.) Marinade Seasoning (Starport 356) 1-1/4 C. water 1 C. oil Mix together Marinade Seasoning, water and oil. Add chicken and marinate for 30 minutes or more.
To VELVETIZE marinated chicken: Oil blanch chicken in deep fryer at 350 F for 60-80 seconds in 1-2 lb batch, remove and cool, then cover and refrigerate until ready to use.
