Southern Chinese / Cantonese

These mild flavor profiles use light soy sauce, garlic, and ginger and are quickly cooked with very fresh fish, meat, and vegetables. These include such recipes as: Beef and Broccoli, Sweet and Sour Chicken, Chicken Lettuce Wrap, Chow Mein, and Lo Mein. A popular dipping sauce is Hawaiian Sweet and Sour Sauce for spring rolls, fried won tons, egg rolls, crab Rangoon, coconut shrimp, chicken nuggets, fried fish fillets and any battered or fried appetizers.

Northern Chinese / Hunan / Szechuan

Hot, spicy, garlicky, and tangy flavors from these regions use dark soy sauce, chili paste, Hoisin sauce and rice vinegar. Many dishes are braised with deep and rich flavors. Popular recipes include: Hot and Sour Soup, Mongolian Beef, Szechuan Lamb, and Peking Duck.

Japanese

Japanese dishes are mildly seasoned and use simple ingredients like citrus and sea vegetables. Korean

Korean food is now the hottest food trend. It’s full of hot, spicy, garlicky, sweet, and savory flavors. Korean BBQ Bulgogi and Kalbi are grilling favorites. Bibimbap is Korea’s favorite fried rice dish, and Japchae is a delicious noodle dish made with sweet potato starch noodles. Flavorful condiments and side dishes include Kimchi, Doenjang (soy bean paste), and Gochujang (fermented red pepper paste).

Southeast Asian

This includes Thai, Vietnamese and Singaporean flavors. Tropical fruit flavors of mango, coconut, and pineapple are combined with spicy chili peppers, fish sauce and coconut milk. Thai basil, lemongrass, cilantro, and galangal (a type of ginger root) are widely used in Southeast Asian cuisine. Popular “comfort food” includes Singaporean Rice Stick Noodles and a Malaysian Coconut Curry Chicken.

Pan Asian / Polynesian

Polynesian menus include Pan Asian flavors: sweet and sour dishes, raw and cooked seafood, sea vegetables and sea “tangles.” Huli-Huli Teriyaki Chicken, Sweet and Sour Pork or Chicken, and Spam Musubi are popular dishes. Use Hawaiian Sweet and Sour Sauce for appetizer dipping sauce for spring rolls, fried won tons, egg rolls, crab rangoon, and coconut shrimp. Chinatown Chefs’ Secret Marinade

By far, Marinade Seasoning is our “must have” product and a Chef’s best-kept secret. Marinade Seasoning is used to tenderize and retain moisture for all proteins. Usage is 4% by weight and marinate for 30 minutes or overnight.

To Marinate:

  • For 10 lbs. sliced or diced meat, dissolve 0.4 lb. (7/8 C.) Marinade Seasoning (Gluten Free Starport 356) with 1-1/4 C. water and 1 C. oil.
  • Mix well then add meat and marinate for 30 minutes or more. May be covered in a container and refrigerate overnight.
